So for a while now I have had the idea of doing a purple/red style coleslaw. So last night at a BBQ at home I decided to give it a go, and I must say I am rather impressed by the outcome!
Ingredients comprised of:
- Half a red cabbage
- Grated red onion
- 4 cooked beetroot
- Some home grown radishes (optional!)
- Good dollop or two of mayo
- Lime juice
I grated up the onion and popped it in the bowl first and splashed on some lime juice. This helps just tone down the flavour of the onion as red ones are quite potent!
Chopped up the cabbage and beetroot (I wore gloves for the beetroot otherwise they will stain your hands forever). Threw it in with the onion, added salt and pepper to taste, a good helping of mayonnaise and gave it all a really good stir. Not only does it taste lovely it also looks pretty too!
